WHY VACUUM FRIED? – in this process fruits & vegetables are fried under vacuum conditions and at a relatively low temperature about 80 to 90 degrees centigrade (Conventional frying is done at 170 to 190 degrees centigrade.) Oxidation of food is prevented during frying since it is done at near vacuum condition. Vitamins & micro nutrients are well preserved. More over the colour, taste and aroma are also well maintained since done at low temperature. OIL content of such chips made is very LOW.
Millard reaction (Conversion of Amino acid to Acryl amide) ,a cancer causing substance, is also prevented due to low temperature frying. Consuming just 30 gms of such chips gives us the nutrients of almost 250 grams of fruits or vegetables.
