There’s something about Italian food, tomatoes and slow roasting. Our wildly popular Basil Pesto didn’t have any tomatoes. So we decided to whip up a pesto rosso with our own tomatoes.
Our slow-roasted pesto rosso (red pesto) is made with tomatoes generously drizzled with olive oil, mountain garlic, a tiny bit of whole red chillies, and cashew nuts roasted in an oven for many hours. Freshly made with no additives, and no preservatives.
Instructions to use: toss your pasta salad with it, combine it with your pasta for a quick pasta meal, spread on one of our slow fermented wholegrain breads, use it to elevate dips, or even drizzled over goat cheese or mozzarella. Ingredients: Tomato, extra virgin olive oil, cashew nuts, walnuts, Parmesan cheese, red chillies, mountain garlic, basil leaves, Himalayan pink salt. Shelf life: 10 days from date of manufacture.
Storage instructions: Store in the refrigerator at all times and use within 5 days after opening.
